What is a Salsa Criolla?

Salsa Criolla is a popular creole sauce mainly served in Ecuador and Peru. It is a mixture of fresh ingredients such as tomatoes, onions, limes, peppers, and cilantro, all finely chopped and mixed together in a small bowl. Salsa Criolla is usually served as a side dish to dishes like empanadas or ceviche. It can also be used as a dip or as a topping on burgers, tacos, or salads.

In traditional Asado, it is also used as a marinade for meat.

Recipe Salsa Criolla

Ingredients:
  • 1 tomato, diced small
  • 1/4 bell pepper, diced small
  • 1 lime, juiced
  • 2 tbsp coriander, chopped
  • 1 tsp olive oil
  • 1 tsp vinegar
  • 1/2 red onions, finely diced
  • 1/2 white onions, finely diced
  • a little chili 
  • a pinch of salt 
  • a pinch of pepper

 Accesories:

  • cutting board
  • Messer
  • Bowl

Time required:

approx. 10 min, but you should prepare it about 12 hours before consumption so that it can marinate well


Preparation:

  1. Chop all ingredients into small pieces
  2. Then put everything into a small bowl and mix.
  3. Now mix the whole thing with some oil and then season with vinegar
  4. Season with salt and pepper.
  5. Cover and place in the refrigerator. Let it steep there for at least five hours.
  6. Before serving, taste again and if necessary, add some fresh lime juice and oil.

Tip:

It is very important not to overdo it with the vinegar, otherwise the entire flavor will be lost. For example, if you make a Salsa Criolla for about ten people, you need slightly less than half a cup of vinegar. You should then add a little more sunflower oil or mixed oil than vinegar. Additionally, Salsa Criolla requires a lot of salt and many spices. 

It is best to prepare your Salsa Criolla the day before a barbecue, as this allows the flavors of the ingredients to better infuse into the liquid.
