Rezept 9: Chimichurri - Asamodo

The herb sauce from Argentina is an ideal companion to meat, fish, but also to cheese or simply pure on bread. There are many different recipes across South America, but the Argentine original is traditionally made mainly from parsley & oregano.

We have now put together our personal chimichurri recipe for you (just like you know it from our trade fairs):

Ingredients:

  • lemon
  • white wine vinegar
  • olive oil
  • Garlic
  • Various fresh herbs (such as parsley or mint)
  • 190g Chimichurri spice mix in a freshness pouch (this contains various spices that were planted, dried & packed in Argentina. Without additives!)

Contents of the Chimichurri sauce:

  • Parsley
  • Oregano
  • Paprika
  • Rosemary
  • Garlic

Time required:

Pure preparation takes only 10 minutes, but the sauce should ideally be left to steep for at least 6 hours (the longer, the better, of course)

Preparation:

  1. Chop all herbs finely and mix
  2. Add spice mix
  3. Mix with white wine vinegar, some water, and lemon juice
  4. Let it steep as long as possible

 Tip: Before eating, refine with a good olive oil. The chimichurri sauce should have a consistency such that it drips off the spoon on its own.

Serving tip: The Chimichurri sauce is best enjoyed with meat, chorizo sausages, or also on bread or with potatoes.
